Our industrial ice maker machine uses vertical, water-sprinkled evaporator plates and cyclic hot gas defrosting. The ice forms on the stainless-steel plates to a thin layer, which keeps thermal resistance low. After a few minutes, the ice is defrosted via automatic hot gas control. The ice breaks into roughly hand-sized pieces, which are separated from the water on a suction slide and then crushed in a rotating icebreaker.
